Love comes in many ways, shapes, and forms.  And many times we get disappointed because it was just not what we were expecting.

 

My love for Anticuchos however has always been faithful and it just never seems to do me wrong. Growing up in Bolivia, I was exposed to different meats and spices.  One in particular that caught my palette was cow heart. I guess I never realized what it was until I was older, and instead of pushing me away, it brought us closer together.

 

Before this project, I had never held a cow’s heart in my hands or realized how big and complex it was. I have to admit that while photographing and exploring it, I thought I would not be able to eat it again. I went back and forth through all of these feelings of sorrow, disgust, affection and an appreciation for just how beautiful this piece of meat was.
